Ingredients

  • 250 g Pokka Reindeer Cold Smoked
  • 1 pack of frozen pizza dough
  • 150 g Cheddar, sliced
  • extra virgin olive oil or vegetable oil
  • lettuce or fresh spinach leaves
  • mayonnaise
  • ketchup
  • freshly ground black pepper

Method

  1. Thaw the pizza dough and cut it into three equal squares. Slice the cold-smoked reindeer as thinly as you can with a sharp knife. Set about 100 g of the slices aside for the top layer, keeping one neat round or square piece for the garnish.
  2. Heat 1 tbsp oil in a frying pan over a medium-high heat and fry the rest of the slices (about 150 g) for 1–2 minutes, until the edges begin to crisp. Lift onto kitchen paper.
  3. Brush a griddle pan with oil and heat it over a medium heat. Grill the three dough squares on both sides until golden and cooked through. After turning them, lay the Cheddar on one of the squares so that it melts. When they are done, spread mayonnaise on one side of the other two squares.
  4. Cover the cheese-topped square with the fried reindeer. Put a second square on top, mayonnaise side up.
  5. Add a layer of lettuce or spinach and the thin slices of cold-smoked reindeer, season with pepper and cover with the third square, mayonnaise side down. Cut the sandwich diagonally from corner to corner and garnish with the reserved piece of reindeer. Mix mayonnaise and ketchup into a pink sauce and serve it on the side in a small bowl.
